Pork is the best …
Pork is the best tasting. Chicken Gyros is all over Athens, not so much in very small shops.. Generally, everywhere I’ve been from south in kalamata until thraki and north east Xanthi to islands is using pork. The real gyros is pork. The lamb/mosxari is Doner….. Gyros is Greek adaptation/improvement of Doner from Turkey.

Nomos Ilias, Crete, Kefalonia uses a combination of pork/lamb..in Crete I’ve seen lamb only gyros….If your speaking of Athens then yes they use mainly pork because of the low price tag, to be honest with you I have not seen a Greek restaurant in Athens with chicken, maybe I overlooked it, its been almost 5 years since I have been to Greece so your more current with foods there….

What part of Greece …
What part of Greece uses lamb for gyro?
I’ve only seen pork and (lately) chicken there, and I lived there for over 20 years.
Really the chicken has been the last 7 years or so in Athens, mostly for the tourists and those on a diet.
