We have to bring a Mexican food( that we cooked) to school. Fish is the one thing I can always make taste right so I figured I would do that. Thanks for the help in advance.
BAKED MEXICAN FISH
1/4 c. butter, soften
1/4 tsp. cayenne pepper
Picante sauce
1/4 bag tortilla chips, crushed
2 fish fillets (catfish is best)
Soften butter to at least room temperature; then stir in cayenne. Coat fish with butter mixture (both sides). Place in shallow baking pan. Sprinkle crushed tortilla chips on top covering entire fillets. Bake at 400 degrees until fish internal temperature reaches 160 degrees. Spoon on picante sauce and serve. Goes well with any food; not just Mexican.

put nice mexican spices on it…go to a william sonoma near you (or another cooking store) and ask them for some ideas on how 2 cook it

Try to sear a white fish in a pan with some basics mexican spices, chili powder, cumin, and salt and pepper. Then server with a brown rice and top with a mango salsa. Put mango, red onions, and grape tomatoes along with some chilies for heat. Then top everything with fresh cilantro.

You could always use some hot sauce. I do know that they eat hot sauce on everything. I use to always think it was just black people. But since I have been getting to know Mexicans , they use hot sauce on everything. If it’s not hot sauce, some kinda pepper or something hot.

A good fresh salsa is very good on fish ,
Dice 2 tomatoes
1 garlic
1 small onion
1 bunch celantro
salt to taste and lemon
lay the fish out and pour the salsa over it
add hot peppers or babanna peppers that are mild

Mexican Cevice Recipe
1 lb halibut fillets or sea bass fillets or red snapper fillets (or use a mixture of fish and shrimp)
5-6 limes (Enough Juice to cover fish)
1 cup diced fresh tomatoes
1 green pepper, sweet, chopped
4 tablespoons chopped parsley or cilantro
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon oregano
2 jalapeno peppers, chopped (or more to suit your taste)
2 tablespoons white vinegar
1 medium onion, finely chopped
2 tablespoons fresh cilantro, chopped
1 dash Tabasco sauce
lettuce leaves (to line serving bowls)
avocados (optional)
black olives, sliced (for garnish) (optional)
Dice the fish (approximately 1/2 inch dice if using shrimp use cleaned shrimp).
Marinate fish in the lime juice in the fridge overnight (this step cooks the fish).
Stir often.
Pour off most of the Lime juice (Just leave it moist).
Add remaining ingredients except lettuce, Avacado and olive. Do this preferably a few hours before serving & refrigerate.
Toss well and arrange in individual serving bowls that are lined with the lettuce leaves.
If you wish garnish with Sliced Avacado and sliced black Olives.

why not some tostadas ^_^
*u need tostadas ( I prefer red ones)
*about 2 cans of chicken breast (drained ) the amount of cans depends on the amount of ppl that will eat
* shredded lettuce
*and fresh white cheese
-after draining the chicken breasts, u put them on a container and smash them very well and separate the chicken
- on a plastic container, put some cheese depending on how much u think u may need, and smashed making it look all crumbled
- add some chicken breast to the tostada ( dont need to put too much)
- add cheese
- add the lettuce
the best thing to add to the tostadas is the salsa!!
I make my salsa like this
on the blender I add some peppers without the end
( the amount of peppers used depends on how hot u want the salsa)
-tomatoes 2
- spices, ( cumin (just some sprinkles), onion powder, garlic powder, salt)
- add also to the blender, a table spoon of cooking oil
- cup of water or a little more if u think it needs it
- close blender and blend all together
- put on a pan, and cook until, u dont see any more foamy residue on top of the salsa, dont forget to stir once in a while. After pour into a container and enjoy with your tostadas
