Super easy, super flavorful and super good for you!
Ingredients:
Black Beans- rinsed and drained
Shoepeg corn- rinsed and drained
Cilantro- R & D
4 Roma Totmatoes- R & D
1/2 – 3/4 Purple Onion
2 Limes
2 Avocadoes
Salt
Pepper
Ex. Virgin Olive Oil
Red Wine Vinegar
Refrigerate over night for best taste.
Serve with Baked tostitos scoops, corn chips, pita bread, tortillas, or eat by itself!

i made this tonight …
i made this tonight(well, i MADE it last night,but we ate it tonight)and paired it with salmon tacos,and it was phenomenal. My brother’s, dad and boyfriend LOVED it. i also put a can of Corn N Peppers in it,and earlier, when eating leftovers, I added some dabbles of sour cream and mixed it up and it was lovely.

this looks so good! my family actually makes something similar called “Mississippi caviar” using black eyed peas instead of black beans and italian dressing in place of the olive oil. Give or take…. and just like this one it’s got to sit in the fridge or it’s not as good.
