Cook and sauce pasta like an Italian. You need good quality pasta, a large pan of salted water and a simple sauce. Italians like simple, seasonal sauces, good young extra virgin olive oil, freshly grated cheese. Add herbs but don’t cook them you will only loose flavor if you do. When the pasta is cooked -but very “al dente” – transfer it in the hot sauce and cook it a little longer in the sauce. Serve your pasta as a main dish, not on the side of meat or fish.
