It looks like the egg wash contained whites and yolks (hence the yellow color). I bet the chicken, good as it looks, absorbed a lot of the oil from frying thanks to the wash. Since yolks are mostly fat, the fat from the yolk attracts the fat from the oil. The oil is absorbed and the chicken is greasy. I was trained to make an egg wash with whites only. Since they’re only protein and no fat, the chicken doesn’t absorb excess oil and it doesn’t come out greasy. Any thoughts on the matter?
